Skin him, chop him up and dip the bits in flour, then fry him off with a few chopped shallots to a light golden brown and put him in a pot in the oven on a low heat for a few hours with a couple of glasses of white wine (preferably oak cask matured chardonnay), a cup of cream and a handfull of chopped fresh tarragon, add a little salt and pepper to taste. You may add a few chopped mushrooms if you absolutely must, but steer away from those horrible white ones they sell as standard in all the supermarkets as they have no real taste, and dont overdo them as the flavour is quite delicate and you'll smother it.
Serve on a bed of tagliatelle or wild rice.
